炒萝卜糕 Raddish Cake

【萝卜糕材料】
白萝卜175克(去皮刨丝)、MAZOLA 混合食用油 2汤匙、蒜2瓣(剁碎)、清水500毫升、粘米粉175
克、薯粉1汤匙、糖 ⁄ 汤匙、盐1茶匙、胡椒粉1茶匙
【萝卜糕拌炒料】
MAZOLA 混合食用油 1汤匙、萝卜糕400克(切成2cm四方块)、蒜1瓣(剁碎)、菜脯3茶匙(剁碎)
、辣椒糊2 1/2 汤匙、虾100克(用 1/2茶匙糖腌好)、A蛋2粒、豆芽150克、韭菜50克
【调味料】混合
鸡精粉1/2 茶匙、酱青2茶匙、黑酱油 1/2茶匙、胡椒粉1/2茶匙
8寸圆蒸盘(涂油)
【萝卜糕做法】
1. 在一个碗内将粘米粉、薯粉及清水混合均匀成滑粉浆。
2. 锅内热MAZOLA 混合食用油,爆香蒜茸,加入白萝卜丝炒至软。倒入粉浆捞匀慢慢煮至浓稠,以少许
盐和糖调味。(图1)
3. 熄火,把萝卜丝糊料倒入蒸盘内,放入蒸炉蒸30分钟至熟。(图2)
4. 取出萝卜糕,面上刷少许MAZOLA 混合食用油,以保持湿润度。待冷切成2公分方块。(图3)

【做法】
1. 在碗内将鸡蛋打散,加入调味料捞匀备用。
2. 镬内热MAZOLA 混合食用油,放入萝卜糕煎约1分钟至微黄,捞起待用。
3. 在同样镬内热少许MAZOLA 混合食用油,爆香蒜茸和菜脯碎。加入辣椒糊继续炒20秒至香。(图

4. 加入虾炒30秒至虾熟,加入炒香的萝卜糕兜炒至香。(图6-7)
5. 然后加入调味鸡蛋拌匀。
6. 最后加入豆芽和韭菜快炒至均匀,即可趁热享用。(图8)

【Raddish Cake Ingredients】
175 g raddish (peeled & shreadded), 2 tbsps MAZOLA Blended cooking oil, 2 cloves garlic (chopped), 500ml water, 175g rice flour, 1 tbsp tapioca flour, ⁄ tbsp sugar, 1 tsp salt, 1 tsp ground white pepper
【Raddish Cake Stir Fry】
1 tbsp MAZOLA Blended cooking oil, 400g raddish cake (cubed into 2cm squares),1 clove garlic (chopped), 3 tsp chopped preserved raddish, 21/2 tbsp chilly paste “cili boh”, 100g prawns (marinated with ⁄ tsp sugar), 2 large “Grade A” eggs, 150g bean sprouts, 50g chives
【Seasonings】
1/2 tsp chicken stock granules, 2 tbsp light soya sauce,1/2 tsp dark soya sauce, 1/2 tsp ground white pepper
8” round tray(greased)
【To Prepare Raddish Cake】
1. In a large mixing bowl, combine rice flour, tapioca flour & water to make a smooth & lump free batter. Set aside.
2. Heat MAZOLA Blended cooking oil, sauté garlic till fragrant, add in shreadded raddish. Stir fry till raddish becomes limp, add in rice flour
mixture, salt, sugar & pepper. Stir continuously until mixture becomes a thick batter.(pic 1)
3. Turn off heat, pour mixture into steam tray. Steam for 30 minutes in a pre-heated steamer.(pic 2)
4. Remove & leave aside to cool. Brush with some extra MAZOLA Blended cooking oil on top to keep the raddish cake moist. Cube in 2 cm squares after cool down.(pic 3)

【To Fry Raddish Cake】
1. Mix egg with the seasoning, set aside.
2. Heat MAZOLA Blended cooking oil & sauté raddish cake until light brown over high heat about 1 minute. Set aside.
3. Using the same wok, heat the balance MAZOLA Blended cooking oil, sauté chopped garlic & preserved raddish till fragrant.Add in chilly paste & sauté for another 20 seconds stirring continuously.(pic 4-5)
4. Add prawns & cook for further 30 seconds until prawns are cooked. Quickly add in sautéed raddish cake. (pic 6-7)
5. Make a well in the center & pour in egg sauce.
6. Lastly add in bean sprouts & chives. Stir a few seconds & dish out. Serve immediately.(pic 8)
